Enjoy this “Super Simple Ostrich Steak” recipe from Lauren of American Ostrich Farms!

  • Rub ostrich steaks with generous drizzle of olive oil (or, preferably avocado to avoid using the EVOO at high heat), salt, pepper, and rosemary.  Can add/substitute other spices as desired (eg. I love to add red pepper flakes)
  • Sear on medium-high heat until both sides brown and form a nice crisp coating – shouldn’t take more than 5 minutes (make sure to use an oven safe pan!)
  • Bake in the skillet at 350 degrees for 5-8 minutes, per inch of thickness.
  • Pull out and check one by slicing in the middle – should be a nice medium rare inside.  Always better to err on the side of under-done since it’s easy to throw it back on the stove to cook it a bit more if needed, but hard to undo.

Wine Pairing Suggestion: pair with a Pinotage, a Shiraz/Syrah, or Cabenet Sauvignon for reds. If you prefer white, pair with a Chardonnay or Chardonnay/Semillon blend.
